Here’s the simple recipe for Valentine’s Day protein chocolate truffles.
¼ cup dried dates, pitted
¼ cup Organic Super Protein Powder
1/8 cup oats
1 tbsp coconut flour
3 squares dark chocolate, melted
water, as needed (about ¼ cup)
Place all of the ingredients except for the chocolate in a blender and combine until thoroughly mixed. Add the chocolate gradually to achieve the correct texture. It should resemble a smooth batter.
Roll the mixture into 8 balls and roll into cocoa powder. Place the truffles on a parchment-lined cookie sheet in the freezer for 30 minutes or until the chocolate hardens.
Alternatively, you can dust with cocoa powder after they come out of freezer before serving.
